Geranylester sind eine Stoffgruppe der organischen Chemie. Es handelt sich um Carbonsäureester von Geraniol mit verschiedenen Carbonsäuren. Sie kommen natürlich in ätherischen Ölen und Insektenpheromonen vor und werden industriell als Duftstoffe und Aromastoffe verwendet.

Vorkommen

Geranylester, insbesondere Geranylacetat, Geranylpropionat und Geranylbutyrat kommen natürlich in ätherischen Ölen vor.[1] Geranylformiat ist Bestandteil von Geraniumöl.[2] Geranylhexanoat und Geranyloctanoat sind Bestandteile von Pheromonen bei verschiedenen Schnellkäfern der Gattung Agriotes.[3][4]

Herstellung

Geranylester können durch biosynthetische Veresterung von Geraniol mit einer Lipase hergestellt werden. So können unter anderem Geranylacetat, Geranylpropionat und Geranylbutyrat erhalten werden.[1]

Verwendung

Geranylester, beispielsweise Geranylacetat, Geranylpropionat und Geranylbutyrat, werden als Duftstoffe eingesetzt.[1] Diverse Geranylester sind in der EU als Aromastoffe in Lebensmitteln zugelassen, darunter Geranylacetat (FL-Nummer 09.011),[5] Geranylbutyrat (09.048),[6] Geranylhexanoat (09.067),[7] Geranylformiat (09.076)[8] und Geranylpropionat (09.128).[9]
